Le Carignan Vieilles Vignes has a bold Mediterranean personality and notes of red-fruit, spice and wild herbs. With intense aromas and a balanced structure, this rich, smooth wine pairs particularly well with spicy and savoury dishes.
Soil Type : River gravel on a red loam subsoil; extremely well-drained
Age of vines : Average of 50 years
Fermentation : Hand-picked harvest. Carbonic maceration on ½ of the harvest. Whole grapes are fermented in a carbon dioxide environnement prior to crushing. The other part is sorted out manually before destemming, crushing and is fermenting on skins for two weeks on average.
Ageing : The two wines produced are then blended before ageing on fine lees for twelve months.
